Grilled Asparagus with Prosciutto

This a great simple and quick recipe. Fresh asparagus paired with a little oil, salt, and pepper is cooked quickly over high heat on the grill.  Asparagus is a health nutrient dense vegetable.

This a great simple and quick recipe. Fresh asparagus paired with a little oil, salt, and pepper is cooked quickly over high heat on the grill.  Asparagus is a health nutrient dense vegetable.

Serves 4
Prep time: 5 minutes
Cooking time: 10 minutes

Ingredients

1 ½ lbs. asparagus, woody ends trimmed or peeled with a veggie peeler

2 tablespoons California olive oil

salt and pepper

5 – 6 thin slices prosciutto 

Directions

  1. Preheat grill to high heat

  2. Brush and clean grill grates. 

  3. Brush grill grates with a light coating of oil

  4. In shallow dish, toss asparagus with oil and season generously with salt and pepper.  

  5. Turn down the grill to medium high

  6. Grill asparagus, turning occasionally until tender when pierced with a fork, 5-10 minutes.

  7. Meanwhile, places prosciutto on grill and cook, turning often, until crispy, 2-3 minutes.  

  8. Place asparagus on serving platter and crumble prosciutto over the top.

  9. Enjoy

Make it your own

Substitute thinly sliced ham for the prosciutto

Wrap each stalk of asparagus in prosciutto and grill

Squeeze a little fresh lemon juice on the stalks before serving

Toss with finely 1 shaved garlic and 2-4 Tbs parmesan cheese
