Peach Gazpacho

This a great summer chilled soup that takes advantage of the fresh peaches and tomatoes, It is a cool and delicious soup perfect for lunch or dinner.

This a great summer chilled soup that takes advantage of the in season fresh peaches and tomatoes, It is a cool and delicious soup perfect for lunch or dinner.

Prep time:10 minutes
Chilling time: 2 – 4 hours

Serves 4

Ingredients

4 ripe peaches, peeled, pitted, and sliced

1 medium yellow tomato, chopped

1/2 medium cucumber, peeled, seeded, and chopped

1 garlic clove, minced

1 tablespoon rice vinegar

2 tablespoons California olive oil

1/2 teaspoon salt

Fresh ground black pepper

2 tablespoons fresh cilantro

Directions

  1. Place the ingredients in a food processor

  2. Process until blended and smooth

  3. Cover and refrigerate at least 2 hours. 

  4. Stir in cilantro and black pepper

  5. Garnish with chopped peaches, cucumber and tomatoes.

  6. Serve and enjoy

Make it your own

1/8 cup chopped sweet onion or shallot

Add 1 medium sweet yellow pepper, chopped

Add 1 tablespoon lime juice

Add 1/8 to 1/4 teaspoon hot pepper sauce

Garnish 1 sliced avocado

Garnish with diced sweet red pepper

Use nectarines instead of peaches
