Balsamic Roasted Potatoes

This is an easy roasted potato dish that can be customized to your taste.  Use the roasted potatoes and make a fabulous healthy potato salad.  Potatoes are rich in fiber, vitamins, minerals, and phytochemicals that can help ward off diseases and provide an overall improvement to your health.

Ingredients

4 large yellow-fleshed potatoes (2 pounds total), scrubbed well

2 1/2 tablespoons California olive oil

1 teaspoon kosher salt

1/4 teaspoon fresh black pepper

2 1/2 tablespoons balsamic vinegar

Directions

  1. Preheat oven to 450°F.

  2. Halve each potato lengthwise, then cut each half lengthwise into 4 wedges. 

  3. In a mixing bowl, combine potato wedges with olive oil, salt, and pepper. Mix to coat wedges

  4. Add to a rimmed 17- by 11-inch shallow baking pan and arrange in 1 layer. 

  5. Roast potatoes, turning over once, until golden brown and cooked through, 20 to 25 minutes.

  6. Sprinkle with 2 tablespoons vinegar, shaking pan to distribute vinegar evenly, 

  7. Roast until vinegar is evaporated, about 3 minutes.

  8. Serve sprinkled with remaining 1/2 tablespoon vinegar and salt to taste.

Make it your own

Add 1 teaspoon onion powder, step 3

Add 1 tablespoon fresh rosemary, finely chopped, step 3

Add 1 tablespoon local raw honey, step 3

Add 1 minced garlic clove to the balsamic vinegar, step 6

Make it into a potato salad, after in a mixing bowl combine the roasting potatoes and the following ingredients:

1 cup chopped large

½ cup finely diced onion

½ teaspoon turmeric
