Cherry Berry Gelatin

Gelatin is a good source of gut-healing glycine and also helps with joint pain. Tart cherry juice is anti-inflammatory as well as pain relieving qualities. Organic strawberries are high in anti-inflammatory and pain relieving benefits. This is a good autoimmune treat.

Serves 6
Prep time: 20 minutes
Fridge time: 2 hours

Ingredients

4 cups tart cherry juice, divided (preferably organic, not from concentrate)

4 tablespoons gelatin

1 cup chopped organic strawberries

Directions

1.     Pour 2 cups of cold cherry juice into a glass container

2.     Add gelatin to the cold juice, mix, & let sit for 1 minute.

3.     In a small pan on medium-low, heat the 2 remaining cups of juice for 5 minutes.

4.     Slowly pour the hot juice into the gelatin mixture while whisking until fully mixed.

5.     Add 1 cup of chopped strawberries.

6.     Pour the mixture into a 2 quart baking dish & refrigerate for 2 hours.

7.     Cut into desired size pieces and serve.

8.    Serve and enjoy
