Coconut Yogurt

Coconut milk yogurt is an excellent healthy alternative to dairy yogurt.  This is a simple 2 ingredient recipe.  The recipe makes a creamy Greek style yogurt.

Coconut milk yogurt is an excellent healthy alternative to dairy yogurt. This is a simple 2 ingredient recipe. The recipe makes a creamy Greek style yogurt.

Prep time: 5 minutes
Total time: 1-2 days

Serves 2-3

Ingredients

1 14-ounce can organic full fat coconut milk

2 capsules probiotic capsules (not pills)

Directions

  1. Sterile a quart jar

  2. Add the coconut milk

  3. Break open the probiotic capsules and stir to mix well

  4. Cover the jar with cheesecloth.

  5. Place the jar in a warm place, such as an oven with the door shut and the oven light on. (See alternative methods below)

  6. Air bubbles will form when it is fermented, should take 1 -2 days

  7. Remove from oven, remove cheesecloth and replace with a screw onlid.

  8. Store in the fridge up to a week

Add 1/4 teaspoon vanilla extract, step 3

Garnish with any of the following,

Fresh fruit
Unsweetened shredded coconut
Granola
Dried fruit
Raw or roasted nuts
Your favorite topping
