Cucumber and Tomato Salad

A wonderful taste of summer when you have fresh cucumbers and cherry tomatoes but good all year round, too.  Make as a side dish for Mediterranean dishes.

Ingredients

1-2 Persian cucumbers (or your favorite type)

1 serrano pepper

1 lime

1 pint of cherry tomatoes, halved

Small handful of mint leaves, chopped

Directions

  1. Chop or dice the cucumber.

  2. Cut the pepper into quarters, removing the stem and seeds.

  3. Put the cucumber and mint in a bowl with the pepper pieces and squeeze the lime juice over.  Let sit for about 30 minutes to infuse some of the flavor from the pepper.  Meanwhile, cut the tomatoes.

  4. Remove the pepper quarters from the cucumbers and add the tomatoes.  Serve as a side dish or over a green salad.

Make it your own

Change the mint for cilantro.

Add a diced avocado.

Use lemon juice instead of lime.

Add a thinly sliced red onion, to taste

Add a handful of baby spinach
