Grain Free Chocolate Chip Cookies

We developed this  grain-free gut friendly cookie for our grandson that has ulcerative colitis. It is a chewy cookie that is not too sweet.

We developed this grain-free gut friendly cookie for our grandson that has ulcerative colitis. It is a chewy cookie that is not too sweet.

Preparation: 12 minutes
Cooking: 22 minutes

Makes 30 cookies

Ingredients

1/2 cup pasture fed organic butter, room temperature

1/2 cup honey

1/2 teaspoon kosher salt

1 teaspoon vanilla extract

1 cup blanched almond flour

1/4 cup arrowroot

1/3 cup coconut flour

1/2 teaspoon baking powder (grain free)

1/2 teaspoon baking soda

1/2 cup shredded unsweetened coconut

1/2 cup organic dark chocolate chips

Directions

  1. Preheat oven to 350F.

  2. Line a cooking sheet with parchment paper.

  3. In a stand mixer, combine the butter, salt, and honey and beat on medium speed 1 minute.

  4. Add vanilla and beat on medium speed one more minute.

  5. Add almond flour, arrowroot, coconut flour, baking soda, baking power, and coconut, mix until the dough comes together.

  6. Add chocolate chips and mix just to combine the chips with the dough.

  7. Using a 1 tablespoon cookie scoop place the dough on the cooking sheet leaving a 1 inch gap between cookies.

  8. Bake 10-12 minutes until just starting to get golden brown.

  9. Remove from oven and cool 10 minutes on cooking sheet.

  10. Remove and finish cooling on a cooling rack.

  11. Store in an airtight container.

Make it your own

Eliminate the coconut

Add 1/4 cup of your favorite nuts, step 6

Replace the chocolate chops with carob or a dairy and soy free chocolate chips, step 6

Replace the chocolate chips with coarsely chopped milk or dark chocolate, step 6

For a little spice and Latin flavors add the following, step 3

1/4 teaspoon cinnamon
1/4 teaspoon chili or cayenne powder, or to taste

Sprinkle cookies as they come out of the oven with 1 teaspoon flakey sea salt

Make it dairy free and substitute extra virgin organic coconut oil, step 3

Use regular baking powder, step 5 (it contains corn starch)
