Roasted Chickpeas

These easy to make crispy seasoned chickpeas will become one of your favorite healthy snacks. They are tossed with a seasoning blend and then roasted until chickpeas take on a nutty flavor and texture. You can eat them in place of chips or add them to your favorite salad. Chickpeas are a rich source of vitamins, minerals, and fiber, offering a variety of health benefits. In addition, chickpeas are high in protein which makes an excellent replacement for meat in many vegetarian diets.

Cooking time: 40 minutes

Ingredients

15 oz organic chickpeas, 1 can, drained and rinsed

2 tablespoon California olive oil

Season Blends

Classic

1 teaspoon ground cumin

1 teaspoon Aleppo pepper

½ teaspoon kosher salt

Smoky garlic

½ teaspoon smoked paprika

½ teaspoon sweet paprika

½ teaspoon garlic powder

½ teaspoon salt

Za’atar

1 tablespoon Za’atar

1 teaspoon sumac

½ teaspoon garlic powder

½ teaspoon kosher salt

BBQ

2 tablespoonsof our favorite rub

Directions

  1. Preheat oven to 425°F

  2. Line a cooking sheet with parchment paper

  3. Dry the chickpeas between two dish towels. Remove the skins by rubbing. The drier you get them, the crunchier they’ll be

  4. In a medium mixing bowl, combine the chickpeas, olive oil, and one of the seasoning blends. Toss well to coat evenly.

  5. Spread chickpeas on the lined baking sheet.

  6. Roast for 10 minutes.

  7. Mix the chickpeas and roast for additional 10-15 minutes, or until browned.

  8. Cool for 5-10 minutes.

  9. Enjoy!

Make it your own

Bake per instructions without seasonings and add one of the following combinations after baking

Chili lime

1 teaspoon chili powder

½ teaspoon ground cumin

½ teaspoon grated lime zest

1 teaspoon fresh lime juice

½ teaspoon kosher salt 

Lemon pepper

½ teaspoon grated lemon zest

½ teaspoon fresh ground pepper

½ teaspoon kosher salt
