Sauteed Asparagus

This is an easy quick asparagus dish with a minimum of ingredients, Asparagus is also low in calories and Is loaded with many essential vitamins, minerals and antioxidants

Serves 4 - 6
Prep time: 5 minutes
Cooking time: 3 minutes

Ingredients

2 bunches medium asparagus

3 tablespoons California olive oil

Kosher salt

Fresh ground black pepper

1 lemon zested and juiced

1/3 cup toasted sliced almonds

Directions

1.    Snap off the woody ends of the asparagus and discard

2.    Slice the spears diagonally into 2 - inch pieces

3.    in a large skillet heat 3 tablespoons California olive oil over medium heat

4.    Add the asparagus and cook until tender but still bright green, about 2 minutes

5.    Season with salt and pepper to taste

6.    Remove from the heat and toss with 2 tablespoons fresh lemon juice

7.    Top with ¼ cup toasted sliced almonds

8.    Add lemon zest to taste.

Make it your own

Add in one thinly sliced garlic clove and/or 1/4 cup minced shallots, step 4

Add 1/3 cup chopped oil packed sun-dried tomatoes, step 4

Substitute 1 tablespoon balsamic vinegar for the lemon juice, step 6

Substitute your favorite nuts for the almonds, step 7
