Sweet Potato and Kale Soup

Ingredients
Serves 4-6
1 large onion, chopped
1 tablesoon oregano
1 tablespoon olive oil
4 cups water, veggie broth, chicken broth or bone broth
2 cans (15 ounces each) organic cannellini beans, rinsed and drained
1 pound sweet potatoes, peeled and cubed
5 cups chopped fresh kale
12 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon pepper
Directions
1. In a large saucepan or Dutch oven, sauté onion and oregano in oil until onion is tender.
2. Stir in the broth, beans, sweet potatoes and kale.
3. Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes.
4. Stir in the garlic, salt and pepper.
5. Simmer 10-15 minutes longer or until sweet potatoes are tender.
Enhancements
Substitute 2-3 leaks (light green and white parts) for the onions, step 1
Add organic chicken sausage, step 2
Substitute chard for the kale, step 2
