Sweet Potato Fries
These healthy oven baked sweet potato fries that are crispy on the outside, and no deep fryer. They are crunchy with a salty-sweet and spicy flavor. They will be one of my favorite snacks. Sweet potatoes are delicious are also naturally packed with many vitamins, carotenoids and many other nutrients.
Serves 4
Prep time: 10 minutes
Cooking time: 35 minutes
Ingredients
2 pounds sweet potato peeled and cut into ¼ x ¼ inch strips
2 tbs California olive oil
1 egg white, lightly beaten
½ teaspoon Kosher salt
¼ tsp black pepper
¼ tsp garlic powder
Directions
Preheat the oven to 425 degrees F.
Line 2 cooking sheet with parchment paper
Combine olive oil, sweet potatoes, salt, garlic powder, black pepper and egg whites in a large bowl.
Mix in sweet potatoes to coat
Spread in a single layer on the 2 cooking sheets, do not crowd
Bake 20 minutes
Turn over and bake for another 15 minutes until crispy, but not brown
Remove from oven and serve
Make it your own
Substitute virgin coconut oil for the olive oil, it has a faint coconut aroma. Trader Joe’s sells it
Seasoning options:
3 springs of rosemary and 1 teaspoon dried sage
1 tablespoon curry powder
1 teaspoon Chipotle
1 teaspoon Italian Top the finished fries with a little freshly grated Parmesan
Substitute 1 Tbs cornstarch for the egg white, step 3
Substitute arrow root starch for the egg white, step 3
