Vegetarian Spicy Bean Chili

This flavorful hearty chili even satisfies the meat eaters. Beans and legumes are seeds and are a great source of nutrients, B vitamins, fiber and as a source of protein.

Cooking time: Overnight

Ingredients

1 16 oz can kidney beans

1 16 oz can pinto beans

1 16 oz can black beans

1 yellow onion, chopped

1. red bell pepper, chopped

1 carrot, peeled and chopped fine

1 26 oz. can tomatoes (diced or crushed)

2-3 T. tomato paste

4-5 T. chili powder (lots!)

1 t. cumin

½ 10 oz can Rotel tomatoes (original)

1 4 oz can diced green chili's

1 cup frozen corn

Directions

1.    Mix all ingredients in crock pot and cook on low overnight.

2.    In the morning, add salt and chili powder as needed.

3. Garnish and enjoy

Make it your own

Add 1 chopped carrot

Add 2 – 3 garlic cloves sliced

Garnish with sliced avocado and lime wedges    

Garnish with tortilla chips
