Loaded Potato Nachos

We all crave comfort/junk food sometimes. This recipe is easy, yummy and nutritious. It’s also just in time for your Super bowl party, feel free to double it. Enjoy!

We all crave comfort/junk food sometimes. This recipe is easy, yummy and nutritious. It’s also just in time for your Super bowl party, feel free to double it.

Serves 4
Prep time: 20 minutes
Cooking time: 30 minutes

Ingredients

Spice mixture:

1 ½ tsp Chili powder

 1 ½ tsp Onion powder

1 tsp garlic powder

1 tsp smoked paprika(optional)

¼ cup nutritional yeast

1/2 tsp salt (optional)

Potatoes:

2 lbs organic potatoes cut into ¼”thick rounds

Toppings:

1 ½ cups organic spinach chopped

¾ cups organic tomatoes diced

1 cup black beans (drained)

1 cup organic corn (drained)

¼ cup red onion diced

2-4 tbsp jalapenos seeded and sliced (optional)

Black olives

1 large avocado diced

¼ cup cilantro chopped

Hot sauce (optional)

 Directions

  1. Preheat oven to 400 degrees F, Line a large baking sheet with parchment paper.

  2. Prepare your spices in a medium bowl, mix all spice ingredients until blended.

  3. Dip each potato slice into the spice mixture to coat each side. Spread out the potatoes evenly on lined baking sheet. (if the spice mix doesn’t stick brush the potatoes lightly with water, then dip in the mixture)

  4. Bake the potatoes for 20 minutes, turn them over ½ way through. 

  5. When the potatoes are finished cooking, line them up close together on a baking sheet without gaps so you can add toppings.

  6. Add a layer of spinach, then tomatoes, beans, corn, red onion, black olives and jalapenos.

  7. Bake for 10 minutes.

  8. Remove from the oven and top with avocado and cilantro.

  9. Sprinkle with hot sauce and enjoy!

 Make it your own

Russet potatoes are recommended but any potato will work that are large enough when cut into rounds to hold the toppings.

Replace spinach with kale 

Kalamata olives or green olives

 Don’t have cilantro substitute the following:

Parsley
Chives

Don’t have red onions, use yellow or white onions.

If you’re avoiding dairy add a plant or nut based cheese.

Substitute one 15 oz can of Muir Glen diced or crush fire roasted tomatoes for the     fresh tomatoes.

Try sprinkling  the leftover spice mix over the top before baking for added flavor.

To double the batch, double all ingredients. You will need to use two baking trays to cook the potatoes, they will shrink after baking. You can put them on one baking sheet before adding the toppings.
