Cauliflower Tacos
These cauliflower tacos pack bold flavor, healthy crunch, and a little zesty zing. So many ways to make it your own with this one!

Ingredients
1 medium head of cauliflower, cut into 1"–2" florets
½ cup California olive oil
2 garlic cloves, finely grated
1 tsp. ground cumin
1 tsp. smoked paprika
½ tsp. Kosher salt
6 6"-diameter corn tortillas
1 small red onion, thinly sliced
Garnish
Favorite hot sauce
Sliced avocado,
Cilantro
Fresh lime wedges
Directions
Preheat oven to 450° with rack a lowest position.
In a mixing bowl combine cauliflower, garlic, oil, cumin, salt, and paprika and mix to combine.
On a rimmed baking sheet arrange cauliflower, do not crowd
Roast 15–20 minutes undisturbed, until golden brown and crispy.
Turn florets over and roast an additional 15–20 minutes longer until golden brown and crispy.
Heat a large skillet over medium-high. Working in batches, toast tortillas in a single layer, turning halfway through, until warmed through, about 1 minute total. Transfer to plates.
Spread each tortilla top with cauliflower. Garnish with onion, avocado, radishes, and cilantro.
Serve with lime wedges for squeezing over.
