Zuccamole

Zuccamole is a great substitute for the classic guacamole we all know and love. This is a great dish to make during the summer when there is an abundance of green zucchini or if avocados are not available.

Prep time: 10 minutes
Cooking time: 25 minutes
Serves 4-6                       

Ingredients

1 pound zucchini, cut into I inch pieces

1 pound tomatillos, quartered

4 garlic cloves, peeled and left whole

¼ cup California olive oil

½ teaspoon kosher salt

¼ cup cilantro

½ lime, juiced

¼ cup pumpkin seeds, raw or roasted

Directions

1.    Preheat oven to 450F

2.    Combine zucchini, tomatillos, garlic, olive oil, and salt.  Mix well to coat veggies

3.    Spread veggies on a baking tray and roast for 20 minutes.

4.    Cool

5.    Using a food processor, process pumpkin seeds until finely ground

6.    Add cooled veggies and cilantro, process into a course paste.

7.    Add lime juice, and pulse processor to combine

8.    Taste and add additional lime juice and salt to taste

Make it your own

Add 1 jalapeno pepper, seeded and deveined (more if you like it spicy) tot roasting pan

Add diced fresh tomatoes after processing

Add finely dice onion to your taste

Add sliced green onion

Add a few drops of your favorite hot sauce
