Roasted Asparagus with Fresh Fruit
Roasting asparagus in the oven is one of the easiest way to prepare it, This cooking method brings out the natural sweetness of the asparagus.

Ingredients
1 pound fresh organic asparagus, trim or peel tough ends
2 tbs California olive oil
2 garlic cloves, peeled and thinly sliced
½ tsp kosher salt
¼ tsp fresh ground black peper
Fresh fruit , sliced into bite sized pieces, see below
4 tbs shelled pistachios
Directions
Preheat an oven to 425 degrees F
Place the asparagus into a mixing bowl, and drizzle with the olive oil.
Toss to coat the spears, then sprinkle with garlic, salt, and pepper.
Arrange the asparagus onto a baking sheet in a single layer.
Add sliced figs and pistachios
Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness.

Fresh fruit options:
1 cup fresh red grapes, halved
1 fresh apple, pear, or peach, thinly slice
1 cup fresh figs quartered
Drizzle them with a little lemon juice or balsamic vinegar after roasting
Sprinkle with freshly grated Parmesan cheese
Add thinly sliced prosciutto before roasting.
