Apple Cabbage Slaw

This is a refreshing & tasty take on an old favorite side dish. Cabbage is low calorie and chock full of vitamin K & C as well as other mineral. It is high in fiber and is an antioxidant. It is in the same group of vegetables as broccoli, cauliflower and kale.

Prep time: 15 minutes
Cooking time: 1 hour 

Ingredients

Poppy seed honey dressing

¼ c cider vinegar 

1 c mayonnaise

2 Tbsp poppy seeds

1/3 c local honey 

1 tsp kosher salt (or more to taste)

1 tsp freshly ground black pepper 

Salad

1 medium cabbage, cored, finely shredded

2 large carrots, peeled, julienne 

1 bunch green onions, thinly sliced 

½ c finely minced parsley leaves, 

4 Fuji apples, peeled, cored, julienne 

Directions

  1. In a medium bowl, combine all the ingredients for the dressing together until well blended. Set aside

  2. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. 

  3. Pour in the reserved dressing and toss until well blended. 

  4. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

  5. Enjoy

Make it your own

You could add nuts, red pepper flakes, celery, cilantro.

You can substitute red cabbage for an even bigger bang of vitamin C.

You can substitute yogurt for the mayo.

You can substitute onion for the spring onion
