Roasted Cod with Lemon Garlic Bread Crumbs

This recipe for baked cod with lemon garlic sourdough bread crumbs is an elegant dish for company or just a casual dinner. The fresh sourdough bread crumb topping includes fresh pressed garlic, butter, olive oil and lemon zest. You will love its crispy topping and moist tender fish. Cod is very healthy and is a good source of omega-3, vitamins B12 and B6, niacin, as well as vitamins E, A, and C. It is also a good source of phosphorus, potassium, selenium, and other trace minerals.

Ingredients

California olive oil

Kosher salt and 

Freshly ground black pepper

½ cup fresh sourdough bread crumbs

1 tablespoon minced fresh parsley

1 pressed garlic clove

½ teaspoon grated lemon zest

1 teaspoon freshly squeezed lemon juice

1 tablespoon California olive oil

1 tablespoon unsalted organic grass fed butter, melted

2 boneless skinless 6 oz cod fillets 

½ cup white wine, water, or veggie stock 

Directions

Preheat oven to 400°F

In a small mixing bowl combine the bread crumbs, parsley, garlic, lemon zest, and ¼ teaspoon kosher salt and mix well.

Add 1 tablespoon California olive oil, 1 tablespoon melted butter, and 1 teaspoon fresh lemon juice and stir until evenly moistened

Add 1 tablespoon California olive oil to an 8-inch frying pan to coat the bottom of the pan. 

Add the fish fillets to the pan. Sprinkle the fish with ¼ each kosher salt and fresh ground black pepper

Add the bread crumb mixture to the top of the fillets

Pour the wine, water or veggie stock around the fillets

Bake for 15 minutes until the fillets are just cooked through in the center, should be a 130°F

Plate and serve with lemon wedges

Make it gluten free by substituting your favorite ground gluten free crackers, step 2

Add 1 tablespoon freshly shaved Parmesan or Romano cheese, step 2

Combine 1 teaspoon each honey and Dijon mustard, spread on top of filets before adding the bread crumb mixture, step 5

Substitute your favorite fish such as salmon for the cod, step 5
