Avocado and Mango Salad

Tropical fruit and avocado with a little citrus are one of my favorite salad combinations. Avocados have high levels of healthy omega-3 fats in addition to riboflavin, niacin, folic, pantothenic acid, potassium, magnesium and vitamins C, E, K, and B6. Mangos are high in vitamin C and have an impressive nutritional profile which supports a healthy immune system and may help fight inflammatory diseases. In addition, mangos help protect you from free radicals damage while improving and promoting digestive health, sharper vision, skin health, cardiovascular health and the prevention of cancer. Arugula is in the same family as broccoli and kale. It is a nutrient-dense food high in phytochemicals which are known to help fight cancer.

Serves 4-6
Prep time 20 minutes

Ingredients

1 shallot, thinly sliced

1 mango, pealed, pitted, and thinly sliced

1 ripe but firm avocado, thinly sliced or 1/2 in cubes

2 cups organic arugula, washed and spun dry

1 tablespoon California olive oil

1 teaspoon lime zest

1 tablespoon fresh lime juice

1 teaspoon white vinegar

i garlic cloves mashed to run through a garlic press

1 pinch of Kosher salt

A few grinds of fresh black pepper

1/4 cup walnuts

Instructions

  1. In a large mixing bowl, combine the shallot and arugula

  2. In a small mixing bowl combine the olive oil, lime zest, lime juice, garlic, pinch of Kosher salt, and a pinch of freshly ground black pepper. Mix to combine.

  3. Add the lime dressing to the arugula and mix to coat the arugula just before serving

  4. Add the mango avocado and, walnuts and gently toss combine

  5. Enjoy

Make it your own

Substitute Meyer lemon for the lime, step 2

Substitute fresh pineapple or papaya for the mango, step 4

Substitute your favorite nuts for the walnuts, step 4

Add 1 Jalapeño pepper, seeded, veins removed and finely diced to taste, step 3
