Roasted Carrots

Roasting carrots caramelizes the natural sugars bringing out their natural earthy-sweet flavors. Carrots are very healthy by helping boost your immunity, improve your heart health, helps prevent against age-related eye diseases, promotes skin health, helps fight inflammation, and can help boost your memory.

Prep time: 10 minutes
Cooking time: 20 minutes

Ingredients

 1/4 cup California olive oil

1 1/2 pounds small heirloom carrots with green tops (carrots scrubbed and trimmed, leaving 1" green tops), reserve the fresh leaves and tender stems. Cut larger carrots in half lengthwise.

1 tsp. kosher salt

2 garlic cloves lightly crushed

1/2 teaspoon coriander 

1/2 teaspoon black pepper

Directions

  1. Heat oven to 450°F

  2. Line a baking sheet with parchment paper

  3. In a large mixing bowl add oil, salt, coriander, black pepper, and carrots until carrots are well coated

  4. Cook 6 – 8 min

  5. Add crushed garlic; roast until carrots are tender, 10 minutes until the carrots are starting to brown and tender and can be pierced with a fork or paring knife

  6. Arrange roasted carrots in serving platter

  7. Serve

Make it your own

Add 1-2 tablespoons honey, step 3

Substitute ground turmeric for the coriander, step 3

Add 1/4 cup organic whole milk Greek yogurt, step 3

Garnish 1/4 cup grated parmesan 

Garnish with fresh chopped cilantro
