Blueberry Pecan Energy Balls
Dried blueberries and pecans team up with cacao nibs for a chocolaty treat any time of day. The cacao is slightly more bitter than chocolate, but the maple syrup helps sweeten it without going too far. Almond butter and chia seeds provide protein to make these bites substantial snacks to fuel your body.

Makes about 32 balls
Prep time: 25 minutes
Cooking time: 0 minutes
Ingredients
1 ½ cups dried blueberries
1 ½ cups pecans
6 tablespoons cocoa nibs
6 tablespoons almond butter
3 tablespoons chia seeds
3 tablespoons pure maple syrup
Pinch of salt
Directions
Combine blueberries, pecans, cacao nibs, almond butter, chia seeds, maple syrup and salt in a food processor. Pulse until finely chopped, 10 to 20 times, then process for about 1 minute, scraping down the sides as necessary, until the mixture is crumbly but can be pressed to form a cohesive ball.
With wet or gloved hands (to prevent the mixture from sticking to them), squeeze about 1 tablespoon of the mixture tightly between your hands and roll into a ball. Place in a storage container. Repeat with the remaining mixture.
