Peach & Cucumber Salad
This is a fantastic summer salad, best when using fresh local peaches. If peaches are not at their best, substitute another stone fruit or a melon.

Serves 6
Ingredients
1 tablespoon lemon juiced
1 teaspoon local honey
2 tablespoon avocado oil
1 cucumber seeded and sliced into 1/4 inch thick pieces
4 fresh local peaches, sliced and pitted
1 teaspoon kosher salt
1/2 teaspoon fresh black pepper
2 cups fresh organic arugula
Directions
Whisk together lemon juice and honey.
Slowly add avocado oil whisking to emulsify
Adjust seasoning with salt and pepper, to taste
In a large mixing bowl combine peaches, arugula, and cucumber.
Cover and refrigerate until needed, no more than 2 hours
Add dressing, stir to combine
Serve immediately and enjoy
Make it your own
Substitute fresh plums or nectarines for the peaches
Add 1 cup of your favorite red tomatoes
Add ¼ cup fresh torn mint leaves
Add 1 ounce fresh crumbled goat or feta cheese
Add a little thinly sliced red onion or shallot
