Chocolate Cream Dream Pie
Chocolate Cream Dream Pie uses tofu create a luscious cream based filling for dessert. This is a decadent dessert made with ingredients that support nutrition and health.

Ingredients
Pecan crust
2 cups pecans
8 dates pitted
2 teaspoons vanilla extract
¼ teaspoon salt (optional)
Chocolate Cream
14 oz organic tofu firm or extra
4 tablespoons organic cacao powder fair trade
1 cup date paste (recipe below)
1 tablespoon vanilla extract
Coconut cream
13 ½ oz coconut cream placed in the refrigerator overnight (BPA free can)
1 teaspoon vanilla extract
1 teaspoon organic cacao powder or shaved dark chocolate
Directions
Pecan Crist
Add all ingredients to a food processor.
Blend until the pecans and dates are completely blended.
With a spatula, scoop the mixture into a pie dish and spread out evenly.
Chocolate Cream
Add all ingredients to a food processor.
Blend until the tofu is completely blended and the mixture is creamy.
Taste for additional sweetener (date paste) or chocolate.
Coconut cream
Carefully scoop the coconut cream (avoid scooping the water) from the can.
Add the coconut cream to a medium-size mixing bowl (discard the water from the can).
Add the vanilla to the coconut cream and beat until creamy and smooth
Assembling the pie
Scoop the chocolate cream into the pie crust and spread evenly.
With a spoon, add dollops of coconut whipped cream around the pie edges so that a scoop of whipped cream is served with each slice.
Top with cacao powder or shaved dark chocolate.
Make it your own
In place of date paste, try mango or other fruit paste for a different flavor.
Silken tofu will work if you cant find firm tofu. The texture will be more like a pudding than a mousse.
Add organic berries or strawberries or cherries on top.
Sprinkle hemp seeds on top.
Sprinkle with crushed peanuts, walnuts, or pistachios.
Date Paste
Adding nutrient-packed natural sweetness to desserts can come from fruit pastes, which are made by soaking dried fruit in water, sometimes with spices or citrus, and then pureeing the thick mixture until smooth. Commonly made from dried dates, figs, apricots, or mangoes, fruit pastes are core ingredients for a plant based diet.

Ingredients
1 cup dates pitted
¾ cup water
Directions
Soak dates in water, so that they are completely covered, for 2 hours or more.
Drain.
Add the dates ¾ cup of water to a food processor or blender and blend until smooth.
Store in an airtight container in the refrigerator for up to one week or freeze for three months.
Use as needed to sweeten desserts, baked goods, smoothies, and more!
Make it your own
If needed, add water a bit of water to create the consistency you need. If using the paste in baked recipes, use as little water as possible. If the paste is runny, it will add additional moisture to the recipe and may negatively impact the finished product.
For a different flavor note, add a pinch of ground spice, such as cinnamon or nutmeg.
Add sea salt with a bit of fresh lemon juice.
Add vanilla extract or the seeds of vanilla pod before blending for vanilla-flavored paste.
Use on top of morning grains. Use to sweeten smoothies and desserts. Add to marinades and dressings.
