Cloud Eggs
Cloud eggs are a unique and easy way to prepare eggs! You whip up the egg whites, form a nest shape with the whipped egg whites, and plop the egg yolk in the center, and bake. Don’t overbake the egg yolk. They are most nutritious when the yolk is runny.
Prep time: 5 minutes
Cooking time: 10 minutes
Ingredients
2 eggs, separated
Salt and ground black pepper
Splash (1/8 to 1/4 teaspoon) of vinegar (I use Trader Joe’s Champagne vinegar)
1 tsp unsalted butter
Directions
Preheat oven to 375 degrees F. Line a baking pan with parchment paper and butter lightly.
Separate eggs (reserve the egg yolks in separate bowls) repeat with 2nd egg.
Pour the vinegar into the egg whites and add the salt and pepper whisk with a wire whisk or electric mixer until stiff peaks form.
Spoon onto the prepared baking sheet, making sure they are not too wide, make a small indentation in the top using a spoon for the yolks.
Bake for 5-6 minutes until they begin to brown
Add the yolks and bake until heated through but still runny, 3-4 minutes.
Serve on buttered toast.
Make it your own

Top with fresh herbs like chives or dill

Substitute vinegar with lemon or lime juice, step 3
