Vegetable Frittata
This is a quick and easy vegetable frittata recipe that is perfect for breakfast, lunch or any light meal. This is recipe is vegetarian and low carb,

Ingredients
4 eggs whisked
2 tablespoons left over roasted veggies
1 tablespoon olives diced
1 tablespoon chives, finely chopped
Directions
Preheat oven 350 degrees
Use one of the two baking methods
Line 2 positions in a cupcake baking tray with cupcake liners or parchment paper
Butter 2 ramekins to prevent sticking
Add the whisked eggs divided evenly into the lined cupcake tray or ramekins and then followed by the remainder of the ingredients. Stir to blend.
Bake 10-12 minutes, test with a knife, it should be dry but a little wet (it continues cooking after it’s removed from the oven).
