This is a quick and easy vegetable frittata recipe that is perfect for breakfast, lunch or any light meal. This is recipe is vegetarian and low carb,

Prep time:10 minutes
Cooking time: 12 minutes 

Serves 2

Ingredients

4 eggs whisked
2 tablespoons left over roasted veggies
1 tablespoon olives diced
1 tablespoon chives, finely chopped

Directions

  1. Preheat oven  350 degrees

  2. Use one of the two baking methods

    1. Line 2 positions in a cupcake baking tray with cupcake liners or parchment paper

    2. Butter 2 ramekins to prevent sticking

  3. Add the whisked eggs divided evenly into the lined cupcake tray or ramekins and then followed by the remainder of the ingredients. Stir to blend.

  4. Bake 10-12 minutes, test with a knife, it should be dry but a little wet (it continues cooking after it’s removed from the oven).

Make it your own

Add whatever veggies you like

Add hard cheese such as Pecorino romano
