Creamy Tomato Soup
This is an easy healthy nutrient-rich tomato soup that is kicked up a notch with fresh organic cream. Tomato soup is loaded with antioxidants and minerals that reduce inflammation, thereby reducing the possibility of developing some cancers.

Ingredients
6 Tablespoons butter
2 chopped onions
4 cloves garlic chopped
½ cup white wine or broth
4 cups chopped ripe summer tomatoes
1 cup basil leaves
½ cup organic cream (optional)
Directions
Melt the butter in a medium saucepan over medium heat.
Add onions and garlic and cook, stirring often, until the onions are translucent, about 3 minutes.
Add wine (or broth) and tomatoes and cook another 5 minutes.
Stir in basil and remove from heat.
Transfer the mixture to a blender and puree or use an immersible blender.
Return the soup to the saucepan, add cream and season with salt and pepper.

Substitute your favorite nut milk for the cream

Substitute 1 tablespoon dry basil for the fresh basil
Use water or chicken broth instead of vegetable broth

Add 1 teaspoon dried thyme
Add 1 stalk celery, chopped
