Tomato Basil Soup
This quick and easy healthy and nutrient-rich tomato soup is delicious hot or cold. Tomato soup is loaded with antioxidants and minerals that reduce inflammation, thereby reducing the possibility of developing some cancers.

Ingredients
2 pounds tomatoes, coarsely cut
1 bunch fresh basil, chopped
2 cups vegetable broth
2 cloves garlic
2 teaspoons olive oil
2 tablespoons balsamic vinegar
salt and pepper to taste
Directions
Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached.
Transfer to a large saucepan and simmer over low heat for 10 minutes.
Serve and enjoy
