Tomato Basil Soup

This quick and easy healthy and nutrient-rich tomato soup is delicious hot or cold. Tomato soup is loaded with antioxidants and minerals that reduce inflammation, thereby reducing the possibility of developing some cancers.

Ingredients

2 pounds tomatoes, coarsely cut

1 bunch fresh basil, chopped

2 cups vegetable broth

2 cloves garlic

2 teaspoons olive oil

2 tablespoons balsamic vinegar

salt and pepper to taste

Directions

  1. Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached.

  2. Transfer to a large saucepan and simmer over low heat for 10 minutes.

  3. Serve and enjoy

Garnish with sliced avocado

Substitute 1 tablespoon dry basil for the fresh basil

Use water or chicken broth instead of vegetable broth 

Add 1 tablespoon California olive oil

Add 1 teaspoon dried thyme

Add 1 stalk celery, chopped

Substitute 2 (14-ounce) cans of organic diced tomatoes (undrained) and simmer for 45 minutes get rid of the canned tomato taste
