Fruit and Nut Chocolate Bars
These no-bake chocolate bars are paleo and are sweetened with just dates. They also include chia seeds which are considered a “superfood” which are high in antioxidants, minerals, fiber, and omega-3 fatty acids in chia seeds may promote heart health, support strong bones, and improve blood sugar management. Prep time: 15 minutes
Chilling time: 20 - 60 minutes
Ingredients
2 ounces bittersweet chocolate
1½ tablespoons virgin coconut oil
½ teaspoon vanilla extract
¾ cup raw almonds
½ cup chia seeds
1/2 cup unsweetened shredded coconut
1/4 cup semisweet chocolate chips
1/4 teaspoon Kosher salt
12Medjool datespitted
Directions
Start by lining an 8x8 inch or loaf pan with plastic wrap. Leave overhang on one side for covering later.
In a double boiler melt bittersweet chocolate and coconut oil. Stir continuously.
Once melted, take off heat and add vanilla.
In a food processor chop almonds into small chunks (not too fine). Transfer to a bowl. Add chia seeds, shredded coconut, chocolate chips and salt and combine.
Process the dates in the food processor until smooth (and form a ball).
Pour melted chocolate mix into the food processor, scrape down the dates and process until combined. Add almond mix and pulse a few times.
Transfer mixture back into the bowl and knead a little to mix. Press mixture into lined loaf pan and cover. Chill in the fridge for 1 hour or freezer 20 minutes.
Cut chilled mixture into 8-10 bars or into smaller squares
Make it your own
Add ½ cup raw cashews or walnuts, step 7
Add ½ cup salted and roasted sunflower seeds, step 7
