Nut Milk Yogurt
Nut milk yogurt is an excellent healthy alternative to dairy yogurt. This recipe uses commercial nut milk for a grain free healthy alternative.

Ingredients
3 cups of your favorite organic nut milk coconut milk
1/4 cup tapioca flour
1 1/2 teaspoons powdered gelatin
1 tablespoon local honey
2 capsules probiotic capsules (not pills)
Directions
Sterile a quart jar and lid
In a small bowl, mix the tapioca with 1/2 cup of nut milk, set aside
In a small bowl, mix the powdered gelatin and 1/4 cup of water, letting the gelatin bloom for 5 minutes
In a 2 quart sauce pan add 1/2 cup water, bring to boil
Add the tapioca mixture and honey, bring to boil again, stirring constantly until the mixture coats the back of the spoon, should take out 10 seconds
Remove from heat and cool to 90F
Add the remaining nut milk
Break open the probiotic capsules and stir to mix well
Pour into sterilized jar and with cheesecloth.
Place the jar in a warm place, such as an oven with the door shut and the oven light left on. (See alternative methods below)
Air bubbles will form when it is fermented, should take 1 -2 days. Taste the yogurt after 1 day, if you want it more tangy let it ferment linger
Remove from oven, remove cheesecloth and replace with a screw onlid.
Store in the fridge up to a week

Fresh fruit
Unsweetened shredded coconut
Granola
Dried fruit
Raw or roasted nuts
Your favorite topping
