Scrambled Eggs

Ingredients

4 organic pasture raised eggs

1 tablespoon extra virgin California oil or pasture fed butter

Directions

  1. In a mixing bowl whisk the eggs and 1/4 teaspoon kosher salt until blended

  2. Add the oil or butter to a  12-inch nonstick or seasoned carbon-steel skillet over medium heat, heat the oil is hot but not smoking the butter browning

  3. Pour the eggs into the center of the pan. With a silicone spatula, gentle stir the eggs, moving the eggs towards the center as they begin to set

  4. Cook until the eggs are just set, 60 to 90 seconds.The eggs should not be translucent or runny.

  5. Transfer to warmed plates

  6. Season to taste with salt and black pepper.

Make it your own

Add your choice of chopped or sliced such as bell peppers, mushrooms, zucchini, onions, tomatoes, potatoes and/or asparagus to the olive oil or butter and sauce until tender before adding the eggs, step 2

Add your favorite cooked breakfast meat before adding the eggs.

Add your favorite salsa or hot sauce before serving
