Roasted Broccolini with Pistachio and Lime Vinaigrette
Broccolini has become one of my favorite vegetables to roast. Roasted broccolini quickly retains the natural texture and sweetness. Broccolini is incredibly good for you. It can help with digestion, lowercholesterol, and aid your body to uptake vitamins and minerals. It has also shown to boost the immune system, protect the skin, aid in preventing lower blood pressure, and reduce inflammation.

Prep time: 5 minutes
Cooking time: 15-20 minutes
Ingredients
¼ cup roasted salted pistachios, coarsely chopped
California olive oil
Zest of 1/2 lime
1 tablespoon fresh lime juice
½ teaspoon honey
1 garlic clove, pressed
¼ cup chopped organic cilantro
2 tablespoons California olive oil
1 bunch of organic broccolini, trim tough ends
Kosher salt and ground black pepper
Directions
Preheat oven to 375°F
Coarsely chop pistachios
In a mixing bowl combine pistachios, lime zest, lime juice, honey, garlic and olive oil. Mix well
Add cilantro to the lime vinaigrette and mix
In a large mixing bowl, combine the broccolini, 1 tablespoon California olive oil, ¼ teaspoon each kosher salt and ground black pepper
Mix to coat the broccolini
Place the broccolini in a single layer on a sheet pan, don’t crowd
Roast for 15-20 minutes, until the broccolini is crisp and still tender and just starting to brown
Transfer the broccoli to a platter
Pour the vinaigrette over the broccolini
Serve warm
Make it your own
Add ½ small jalapeño chili, stemmed, seeded and finely chopped, step 2
Substitute 1 tablespoon lemon juice for the lime juice
Substitute ½ bunch organic broccoli (about 3/4 pound), cut into florets into bite sized pieces, stems peeled and sliced
Grill 5-10 minutes on a medium hot grill instead of oven roasting
Don’t feel like roasting or grilled, just used your usual broccoli cooking method
