Swede

This is a traditional Scottish side dish called neeps & tatties, it’s usually made with potatoes. My mother in-law always used carrots and called it swede!

 

Serves  4 sides
Prep time: 15 minutes
Cooking time: 30 minutes

Ingredients

3 medium/large carrots, peeled & diced

1 Large rutabaga, peeled & cubed

2  tbsp butter

Salt

Pepper

Directions

1.    Bring a large pot of salted  water to asal boil, add rutabaga and carrots and boil until fork tender.

2.     Drain the vegetables and return to the pot. Add the butter, salt & pepper to taste. Mash until smooth.
