Roasted Brussel Sprouts with Garlic
This is an easy recipe for crispy roasted Brussels sprouts for a healthy side dish! Brussels sprouts boast high levels of many nutrients, including vitamin K and vitamin C, and have been linked to several health benefits.
Serves 2 mains or 4 sides
Prep time: 5 minutes
Cooking time: 30 minutes
Ingredients
1 pound brussels sprouts, trimmed bottoms and sliced in half, top to bottom
4 Tbs California Olive oil
4 Garlic cloves, peeled
Kosher salt
Fresh ground black pepper
1 Tbs balsamic vinegar
1 tablespoon grated, or 1/4 cup shaved Parmesan cheese - optional
Directions
1. Preheat oven to 400F
2. Heat olive oil in a larger cast-iron pan over medium heat until the olive oil shimmers.
3. Place the sprouts cut side down in a single layer
4. Add peeled garlic cloves
5. Salt and pepper to taste
6. Sauté sprouts until they begin to brown about 5 minutes
7. Transfer to oven and cook another 20 minutes until tender
8. Remove from oven, stir in balsamic vinegar, sprinkle Parmesan cheese and serve warm or hot
Make it your own
Increase garlic cloves to 6, step 4
Add a pinch of red pepper flakes for a little spice, step 5
Add a little sliced red onion, step 4
Substitute a little squeeze of lemon juice and/or lemon lest for the balsamic vinegar, step 8
Have sweet tooth, drizzle a little honey, step 8
Don't have a cast iron pan:
1. Substitute a baking sheet lined with parchment paper that has been preheated in the oven.
2. Drizzle sprouts with olive oil and season with salt and pepper non the baking sheet
3. Roast 20 minutes until tender
4. Remove from oven, move sprouts to serving bowl and add the balsamic vinegar
