Southwest Salad with Avocado Dressing

It’s quick and tasty salad using fresh seasonal produce. 

Prep time 25 minutes
Serves 4 - 6

Ingredients

Salad Ingredients

1 large head romaine lettuce chopped

1 can black beans rinsed and drained

1 cup sweet corn

1 ½ cups cherry tomatoes halved

1 ½ cups purple cabbage shredded

¼ cup red onion finely chopped

Avocado Lime Dressing

1 small ripe avocado

¼ cup lime juice

1 clove garlic

½ bunch cilantro

½ tsp salt & pepper

1 jalapeno

¼ cup red onion

½ tsp ground cumin

1 tbsp maple syrup

¼-½ cup water for desired thickness

Directions

  1. Add all the ingredients for the salad to a large bowl and set aside.

  2. Prepare the dressing by adding all the ingredients except the water to a blender. Blend until smooth and creamy. Adjust thickness by adding water a few tbsp at a time and blending until desired consistency. Season to taste.

  3. Pour the dressing over the salad before serving.

Make it your own

This salad can be made 3 days in advance if you store the dressing separately.

Add grilled chicken or fish for added protein.
