Strawberry & Cucumber Salad
This is a fantastic summer salad, best when using fresh local organic strawberries. If strawberries are not at their best, substitute other organic berries or melon.

Prep time: 15 minutes
Ingredients
Vinaigrette
Zest of 1/2 lime
1 lime juiced
1 garlic clove, pressed or shaved on a microplane grater
1 tablespoon local honey
2 tablespoon avocado oil
1 cucumber seeded and cut into 1/2 inch pieces
1 pound fresh local strawberries, cut in half
1 pound sun gold tomatoes, cut in half
1 teaspoon kosher salt
1/2 teaspoon fresh black pepper
Directions
Whisk together lime juice, lime zest, honey.
Slowly add avacado oil whisking to emulsify
Adjust seasoning with salt and pepper, to taste
In a large mixing bowl combine strawberries, cherry tomatoes, and cucumber.
Add half of the dressing salad, stir to coat
Cover and refrigerate until needed, no more than 2 hours
Add remaining dressing, stir to combine
Serve immediately and enjoy
Making it your own
Use your favorite cherry tomatoes , step 4
Substitute your favorite berries for the strawberries, step 4
Add some melon, peaches, or red grapes for added layers of flavor, step 4
Add a hand full of fresh mint coarsely chopped, step 5
Add 1 ounce fresh crumpled goat cheese, step 7
Add 2 cups arugula, step 7
