Strawberry & Cucumber Salad

This is a fantastic summer salad, best when using fresh local organic strawberries. If strawberries are not at their best, substitute other organic berries or melon.

Serves 6
Prep time: 15 minutes

Ingredients

Vinaigrette
Zest of 1/2 lime
1 lime juiced
1 garlic clove, pressed or shaved on a microplane grater
1 tablespoon local honey
2 tablespoon avocado oil
1 cucumber seeded and cut into 1/2 inch pieces
1 pound fresh local strawberries, cut in half
1 pound sun gold tomatoes, cut in half
1 teaspoon kosher salt
1/2 teaspoon fresh black pepper

Directions

  1. Whisk together lime juice, lime zest, honey.

  2. Slowly add avacado oil whisking to emulsify

  3. Adjust seasoning with salt and pepper, to taste

  4. In a large mixing bowl combine strawberries, cherry tomatoes, and cucumber.

  5. Add half of the dressing salad, stir to coat

  6. Cover and refrigerate until needed, no more than 2 hours

  7. Add remaining dressing, stir to combine

  8. Serve immediately and enjoy

Making it your own

Use your favorite cherry tomatoes , step 4

Substitute your favorite berries for the strawberries, step 4

Add some melon, peaches, or red grapes for added layers of flavor, step 4

Add a hand full of fresh mint coarsely chopped, step 5

Add 1 ounce fresh crumpled goat cheese, step 7

Add 2 cups arugula, step 7
