Sugar Snap Pea Salad

Serves 2 -4
Prep time: 15 minutes

Ingredients

Dressing

2 Tbsp Meyer lemon juice

2 Tbsp California olive oil

1 clove garlic, minced or grated

1 ½ tsp Dijon mustard

1 tsp honey

2 Tbsp finely chopped shallot

1/2 tsp Kosher salt

1/4 tsp black pepper

Salad

10 ounces thinly sliced sugar snap peas, ends trimmed, sliced at a diagonal

1/4 cup roughly chopped roasted salted pistachios 

1/4 cup chopped fresh cilantro

Directions

  1. In a small mixing bowl, combine the lemon juice, olive oil, garlic, mustard, honey, shallot. salt, and pepper. Whisk to emulsify.

  2. In a large serving bowl, add the snap peas, basil, and pistachios add dressing and toss to combine and coat with the dressing.

  3. Garnish with pistachios and cilantro

  4. Serve right away. Best when fresh, the dressing will soften the sugar snap peas over time

Make it your own

Substitute you favorite nuts

Substitute fresh basil for the cilantro

Add 1/8 -1/4 tsp crushed red pepper flakes

Don’t have Meyer lemons, use equal parts fresh lemon juice and orange juice or tangerine juice
