Sweet Potato Balls

For a fastened deletions dinner or side,  try these oven baked sweet potato balls.  Sweet potatoes are a great source of fiber, vitamins, minerals, and antioxidants.

For a fastened deletions dinner or side, try these oven baked sweet potato balls. Sweet potatoes are a great source of fiber, vitamins, minerals, and antioxidants.

Prep time: 12 minutes
Cooking time: 20 minutes

Serves 2-4

Ingredients

1/2 cup raw walnuts

1/2 cup raw almonds

1 cup organic rolled oats

1 medium garlic clove

3/4 cup sweet potato (cooked and cooled, skins removed)

2 tbsp nutritional yeast

1 tsp dijon mustard

1/2 tsp rosemary (fresh leaves, or fresh thyme)

1 1/2 tbsp organic tamari (or coconut aminos)

Instructions

  1. In a food processor, add the walnuts, almonds, oats, and garlic, and process through until crumbly.

  2. Then add the sweet potato, nutritional yeast, dijon mustard, rosemary, and tamari and process until just well combined.

  3. Transfer the mixture to a large bowl, and refrigerate for about ½ hour.

  4. When ready to bake, preheat oven to 375°F and line a baking sheet with parchment paper.

  5. Take scoops of the mixture (1–1 ½ tablespoons in size) and place on the prepared baking sheet

  6. Roll into balls

  7. Bake for 17–20 minutes, until golden and just firm to the touch (do not overbake or they will dry out)

  8. Remove, and serve with pasta or tomato sauce, or as an appetizer with dipping sauce!

Make it your own

Add 1/2 - 1 teaspoon fresh orange zest. step 2

Add 1/2 teaspoon fresh grated ginger, step 2

Roll balls in unsweetened shredded coconut, step 6
